Squash & Tomato au Gratin

  • Butter Nut or any winter squash (approx 4 pounds)
  • 2 Tbs olive oil
  • 2# tomatoes, peeled & chopped
  • 2 Cup shredded cheese

Trim ends of squash, then slice in half. Scoop out seeds. Place squash halves, cut side up, in microwave. Cover with piece of waxed paper, and cook approx 8-9 min.

Peel squash and cut in 1 inch cubes. Place in 13X9 baking dish. Drizzle with olive oil.

Can add basil, garlic and/or oregano. Scatter tomatoes over, then cheese. (I added 1/2 c tomato sauce)

Bake approx 20 min.
