Green Tomato Chocolate Cake

Ingredients

  • 2/3 cup softened butter
  • 1 3/4 cup sugar
  • 3 room temp. eggs
  • 1 tsp vanilla
  • 2 tsp grated orange peel
  • 1/2 cup unsweetened cocoa
  • 2 1/2 cup all-purpose flour
  • 2 tsp. baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 cup cultured buttermilk
  • 1 cup pureed seeded green tomatoes (about 3 med. tomatoes)
  • 1 cup broken pecans

How to make it

  • In a mixing bowl cream together butter and sugar until light and fluffy.
  • Add eggs one at a time.
  • Beat well after each addition.
  • Stir in vanilla and orange peel.
  • Combine cocoa, flour, baking powder and soda, salt and cinnamon.
  • Add to creamed mixture alternately with buttermilk and tomatoes.
  • Fold in pecans.
  • Turn into a greased and lightly floured fluted 10 inch tube pan.
  • Bake at 350 for 1 hour or when cake testsas done.
  • Invert onto rack until completely cool.

GLAZE

  • 2 cup confectioners sugar
  • 3 tbsp orange juice
  • grated peel of 1 orange

GLAZE

  • Combine glaze ingredients in a small bowl and mix well.
  • Drizzle over cooled cake.
